As fish has such a small amount of connective tissue, it requires very little cooking. If it is overcooked, the flakes fall apart and the fibers become tough, dry and tasteless. There are several ways of cooking fish, but the cooking process should, in general, be short and painless. Although fillets are more popular, most cooks agree that fish on the bone as with meat has more flavor.

When cooking fish the most important thing that you need to remember is never to overcook it or have it over done. Especially if the fish is fresh, having it just slightly done preserves its strong flavor and soft texture. We don't want our fishes to taste flavorless and dry. Sweet Herbed Shrimp

* 1/3 cup water
* 2 tablespoons dark brown sugar
* 2 tablespoons minced peeled gingerroot
* 1 tablespoon fish sauce (look for it in the Oriental section of the store)
* 1/2 teaspoon cracked pepper
* 2 garlic cloves, minced
* 1 pound large uncooked shrimp , peeled and deveined
* 3 tablespoons thinly sliced fresh basil
* 1/2 teaspoon fresh lime juice
* 3 cups hot, cooked rice

Combine the water, brown sugar, gingerroot, fish sauce, pepper and garlic in a large, skillet; stir well. Place over high heat and cook 5 minutes until slightly thickened. Add the shrimp , and cook for 3 minutes more or until shrimp is coral and cooked through. Stir constantly while this is cooking. Remove from the heat and stir in the basil and lime juice. Serve over rice.

* The fish is done cooking when it is opaque, and begins to flake.

* A temperature between 350°F and 375°F is an ideal range for deep-frying. The correct temperature can be determined with the use of a candy thermometer.
* Increase cooking time when cooking fish that is frozen.
* To check the fish for doneness, use the tip of a sharp knife and cut through the thickest part of the fillet.
* You may want to try other herbs and spices with the batter for a more delicious fish.

* You can place fish directly on the grill, but if you do this, use a firm fleshed fish, like grouper, tuna, swordfish, or salmon.
