Seafood Salad Recipes - Learn How To Cook Fish

To poach fish, you need to add herbs, seasoning and a thickener such as cream.

In order to get the best results from your baked fish recipes, you need to make sure the fish is defrosted properly. Frozen fish is just as nutritious as fresh fish and keeps in the freezer for weeks or even months, depending on the fish. You should defrost the fish on the lower shelves of the refrigerator for 8 to 12 hours.

Sweet Herbed Shrimp

* 1/3 cup water
* 2 tablespoons dark brown sugar
* 2 tablespoons minced peeled gingerroot
* 1 tablespoon fish sauce (look for it in the Oriental section of the store)
* 1/2 teaspoon cracked pepper
* 2 garlic cloves, minced
* 1 pound large uncooked shrimp , peeled and deveined
* 3 tablespoons thinly sliced fresh basil
* 1/2 teaspoon fresh lime juice
* 3 cups hot, cooked rice

Combine the water, brown sugar, gingerroot, fish sauce, pepper and garlic in a large, skillet; stir well. Place over high heat and cook 5 minutes until slightly thickened. Add the shrimp , and cook for 3 minutes more or until shrimp is coral and cooked through. Stir constantly while this is cooking. Remove from the heat and stir in the basil and lime juice. Serve over rice.

Here are some cooking and buying tips to get you started:

* Olive oil or a combination of oil and butter will give the fish a tasty crispness.
* For moister broiled fish, first steam or poach the fish until close to being done and then brown it under the broiler.
* Baking cooks fish quickly at a high temperature and you can bake fish fillets, steaks, whole fish, or seafood.





* To thaw frozen fish or seafood, thaw slowly in the refrigerator for 24 hours.
