Mexican Shrimp Recipes - Fish Cooking Made Easy
To maintain the delicate flavor of a newly caught freshwater or saltwater fish, this must be handled properly to avoid spoilage and preserving the fish. There are ways to properly prepare and maintain the quality just after the catch of the fish into a sumptuous fishmeal.
Some fish, especially tuna and salmon, can be served medium rare. A lot of people don't enjoy fish cooked this way, and serve their fish well done, but the choice is up to you.
I have been cooking fish since I was a child with my Grandfather. I remember going out early in the morning to catch some salmon for the evening dinner. I found a great recipe book that has a lot of the same recipes that he used to use.

Shrimp Pockets
* 1/2 pound raw shrimp , shelled and deveined, finely chopped * 3 tablespoons chopped water chestnuts * 1 teaspoon minced ginger root * 1 tablespoon slightly beaten egg * 1 teaspoon cornstarch * 2 teaspoons soy sauce * Bread or pita pockets (sliced)
Cut the crusts off the slices of bread and let them dry a little before using. Finely chop the shrimp , water chestnuts, and ginger, then add the soy sauce, egg, and cornstarch. Spread the mixture on the bread or in the pitas, and place on the Franklin's sandwich side. Cook until the bread is toasted and the shrimp mixture inside is warm.
Some tips for you:
* Flour is often used as a coating for foods that are fried. Pieces of fish are often pan-fried with a flour coating, which develops a crisp, flavorful crust, and an interior that is tender flaky. * You can always cook it some more if it is undercooked, but you can't uncook it if it is overcooked. * You can buy grill baskets made for grilling seafood - these help small pieces of fish from falling through the grill, and will help in grilling delicate fillets.
* It is best to grill, broil, steam or poach oily fish so that their natural fats can drain while they are cooked. * To prevent overcooking, you'll need to pull it out slightly before it's done.
