Easy Shrimp Recipes - Finding And Cooking Fish
Baking at a high oven temperature really concentrates the flavors of fish and helps the sugars on the surface caramelize for superior flavor. Roasting is baking at temperatures above 400 degrees. You can season the fish with just about anything you like before roasting.
When cooking fish the most important thing that you need to remember is never to overcook it or have it over done. Especially if the fish is fresh, having it just slightly done preserves its strong flavor and soft texture. We don't want our fishes to taste flavorless and dry. You want our fishes to be juicy and palatable.

Sweet Herbed Shrimp
* 1/3 cup water * 2 tablespoons dark brown sugar * 2 tablespoons minced peeled gingerroot * 1 tablespoon fish sauce (look for it in the Oriental section of the store) * 1/2 teaspoon cracked pepper * 2 garlic cloves, minced * 1 pound large uncooked shrimp , peeled and deveined * 3 tablespoons thinly sliced fresh basil * 1/2 teaspoon fresh lime juice * 3 cups hot, cooked rice
Combine the water, brown sugar, gingerroot, fish sauce, pepper and garlic in a large, skillet; stir well. Place over high heat and cook 5 minutes until slightly thickened. Add the shrimp , and cook for 3 minutes more or until shrimp is coral and cooked through. Stir constantly while this is cooking. Remove from the heat and stir in the basil and lime juice. Serve over rice.

Seafood does present some grilling challenges, however, here are some tips should help you on your way to grilling great seafood.
* Another test to use for doneness is to check the meat with a knife to see if it is firm and beginning to separate or flake. * If you don't oil your grill, the fish will stick, and break apart when you try to remove it.
* You can place fish directly on the grill, but if you do this, use a firm fleshed fish, like grouper, tuna, swordfish, or salmon.
* Perfectly cooked fish should flake easily and be opaque with just the faintest amount of translucency in the middle.
